Gluten Free White Bread Rolls

These bread rolls are like white bread dinner rolls, similar to the Basco Brand bread mix but without the dairy (milk powder) and without the corn-based dextrose.  The quantity is enough for 5 or 6 rolls – just enough to have with soup or dinner, but the quantity can easily be doubled to make more.

This receipe is Grain-free, gluten-free, milk and butter free and FAILSAFE but does contain egg.  Enjoy!!!

Being Grain-Free & Nut-Free Baking Tips

Lots of people who can’t eat grains also have a problem with nuts – compromised immune systems often have multiple sensitivities and nuts are at the top of the tree for producing nasty reactions. Here are my tips for being grain free without nuts.

Amaranth Berry Cake

Raspberry Lemon & Almond Slice

125g butter
1 cup caster sugar
splash of vanilla essence (about 1.5 tsp)
3 eggs
1/2 cup plain yoghurt with a splash of lemon juice
1 cup almond meal
1/4 cup amaranth flour
1/4 cup buckwheat flour
1/4 cup potato starch
1 cup frozen rasberries

This slice is alot like a friand.  It is slighly chewy on the outside, soft and moist on the inside and smells and looks amazing fresh out of the oven, with the raspberry marbled top. It looks and tastes “special” its flavours ideal to serve to your grain-eating guests who would normally find the flavours of buckwheat and amaranth too strong – give them this with a dusting of icing sugar and a spoon of thick yoghurt or cream to serve, and you will have some very happy people begging you for the recipe.  Lots of sugar so not even pretending this one is healthy but perfect for an occasional treat.

Caramel Vanilla Cake

Suitable for children with a Salicylate allergy IF you use normal caster sugar instead of rapadura, and DONT USE vinegar but then cake will not be caramel, just vanilla (but still very nice).  This cake has a beautiful texture and keeps really well, although it normally doesn’t last that long.

Failsafe Chicken Nuggets

Most nuggets and sausage contain flour, even gluten free ones have rice flour, not to mention all the other nasties like preservatives and flavour enhancers. Kids will absolutely love these nuggets and never ask for the fast food version again….yes, they are THAT good.
